At Le Cordon Bleu Ottawa Culinary Institute we recognize the need for accelerated learning and have developed what is now known as the ‘Intensive Course’. Offered only once a year, the objective of this program is to help you achieve your Basic Certification in either discipline of Cuisine or Pâtisserie within 5 weeks. The Intensive Course program was developed to complement our traditional certificate programs.

Graduates from this new program have been known to be amongst a variety of people - industry professionals, career changers or passionate individuals with a flair for cooking. We encourage those who apply to be disciplined and dedicated due to the pace at which the course is taught. Students are expected to be in classes from anywhere between 40-45 hours per week. There is no difference in cost or curriculum structure between the normal “Basic Cuisine” course and the “Basic Cuisine Intensive” course.

Students who successfully graduate from the Intensive Course program are eligible to register for Level 2 (Intermediate) in January 2010.

Course Description:


Basic Cuisine

You will be introduced to classic cuisine skills and techniques— knife handling and care, hygiene and sanitation, classic knife cuts, cooking methods, food preparation, mise en place, palate training, and commonly used French terms.

Basic Pâtisserie

An introduction to the essentials of creating fine French pastry with flour, butter, sugar, eggs —and panache! You will learn the classic techniques of applying and combining these ingredients into a rich diversity of pastries, traditional desserts, cakes – Saint Honoré, Black Forest and Tarte au citron and doughs—pâte able, pâte feuilletée, pâte à choux.
